Recipe of coconut cookies at home

It is much easier to make coconut cookies at home. The ingredients used in coconut cookies are easily available. Desiccated coconut is one of the core ingredient of these coconut cookies. One should go for making desiccated coconut at home. Ones available in the market are rarely good in taste. Preparing desiccated coconut at home is very easy as well as safe from preservatives and adulteration.

Desiccated coconut at home

  • Choose a good quality coconut from the market.
  • If you have dried coconut it is well and good. But in case you have raw or watery coconut, you need to get it dry by leaving it for a few days.
  • Or, one can bake it as well. Just shred the coconut and spread it on butter paper and place it on baking tray. Bake it at 200 degree F for 20 minutes, till golden brown.
  • If you have dried coconut, cut it into small pieces and grind it well. Desiccated coconut is ready at home.

  • whole wheat flour – 1 cup
  • baking powder – 1/2 tsp
  • salt – a pinch
  • desiccated coconut – 1/2 cup
  • chopped coconut – 10-15 pieces
  • butter/coconut oil – 1/4th cup
  • brown powdered sugar/mishri – 1/3rd cup
  • home made condensed milk – 1tbs
  • milk – 1/4th cup
Preparation for the recipe of coconut cookies
  • In a bowl, take whole wheat flour, baking powder, salt and sieve them well.

  • Add desiccated coconut to it and mix well.
  • Add butter and condensed milk to it and bind all the ingredients together.
  • Knead a dough.

  • Now, take keep the dough on the food wrap and roll the dough into a rectangular shape.

  • Keep the dough in the refrigerator for 2 hours.
  • Method 1: After two hours, take the dough out and cut it into pieces.
  • Or you can also make cookies directly without refrigerating.
  • Method 2:What all you need is to take half portion of the dough, roll it in a round shape (like chapati, but much more thicker than it) and cut it using cutter. Now, dip the cookies all around with desiccated coconut.

Baking coconut cookies in oven
  • On a baking tray, place a butter paper sheet and keep the cookie pieces over it.
  • Garnish them with chopped coconut pieces.
  • Preheat the oven for 10 minutes.
  • Bake them in oven for 25-30 minutes at 180 degree C.

  • Grease a plate and place cookies on it.

  • On a gas flame, place a deep bottom pan.
  • Place a stand in it. If you do not have stand, you can spread evenly a thick layer of salt in it.(You can re-use this salt over and over for any other baking dishes).
  • Cover the pan with lid.
  • Preheat the pan at high flame for 10 minutes.
  • Now place the plate in the pan and cover the lid.
  • Bake the cookies at low to medium flame for 30-40 minutes.
  • Once they are golden brown, allow them to cool.

Some Dos’ and Donts’
  • Pre heating oven or the pan is essential.
  • keeping dough in the refrigerator is optional. (keeping in refrigerator makes the cookies bake more graciously)
  • Condensed milk too is optional.
  • Salt is necessary to balance the sweetness of cookies.
  • Allowing cookies to be cooled makes them crispy because they are soft when hot.
