Chosing ragi flour

One can purchase ragi grains from market. Then the further process goes on as follows:

  • Make sure there are no stones in the grain. Wash them properly and soak them in clean water for 24 hours. Rinse them well and sun dry them till they are dried completely. Now grind them well and store it.
  • One can also purchase ragi or millet flour directly from the market.
For flour :
(measurement of butter, sugar,etc will not be the same as flour):
1 cup = 128 grams
1/2 cup = 64 grams
1/3 cup = 43 grams
1/4 cup = 32 grams

Ingredients

  • ½ cup Whole wheat flour
  • ½ cup Ragi/finger millet flour
  • ¼ cup powdered mishri or brown sugar
  • ½ tsp baking powder 
  • ¼ tsp baking soda 
  • ¼ cup condensed milk(optional)
  • ¼ cup butter 
  • dry fruits of your choice
  • 1.5 cup milk

Steps for making cake

Preparation

Dry mix

Step 1: In a bowl take whole wheat flour 1/2 cup, 1/2 cup ragi flour, powdered mishri 1/4 cup, 2 tbs cocoa powder, 1/2 tsp baking powder, 1/4 tsp baking soda and seive them well.Sieving the ingredients well ensure if there are no lumps.

step 2: Keep the dry mix in a side.

Wet mix

Step 3: In another bowl, mix 1/4 cup condensed milk and 1/4 cup butter.

Step 4: Now, add to the mixture 1/3 cup milk and mix it well. Again add 1/3 cup milk and make a lump free batter.

Step 4: At this stage, take the bowl of dry mix and add wet mix in 2 batches, one by one.

Step 5: Prepare lump free batter. Add more milk as per requirement.

Step 6: Take a baking tin and apply butter evenly to avoid sticking. Place a butter paper in it properly.

Step 7: Pour the batter in greased tin and tap it twice.

Step 8: Top the batter with chopped dry fruits of your choice.

For baking ragi cake recipe with oven

Pre-heat oven at 200 degree C, for 10 minutes at toast mode. And bake it for 25-30 minutes at 180 degree C. To check if cake is done, take a tooth pick or knife and insert it. If it comes clean, it is done.

For baking ragi cake recipe without oven
  • On a gas flame, put a deep pan and put some salt or sand in it.
  • Spread the salt evenly.
  • Put another stand over the salt.
  • cover it and allow it to pre heat for 10 minutes at high flame.
  • After 10 minutes, place the tin inside pan and cover it.
  • Allow it to bake for 30-40 minutes at low to medium flame.
  • Once done, allow it to cool.

Some do’s and donts’

  • Condensed milk is optional. In case condensed milk is not used, add 2 tbs more powdered mishri or brown sugar.
  • Milk is not recommended as such with ragi, so one can add any plant based milk or hot water.
  • Jaggery can also be used in cake but then the taste will vary.
  • Pre heating is essential.
  • Time of baking may vary depending on oven.
