Veg puff patty – Whole wheat flour

Whole wheat healthy patty is a great snack time recipe.

Whether it is veg puff patties or veg patties, both have major ingredients common. Both are basically prepared from refined flour, stuffed vegies and are deep fried mostly in oil or baked sometimes. It is crispy and forms layers as it if prepared from refined flour. A lot of butter is used in this recipe, where the pastry sheets are repeatedly folded and rolled out before baking it.

Thus, it can be seen, that veg puffs patty are highly demanded in the market and is choice of many.

What is veg puff made of ?

This is the frequently asked question by many people. So, here is the answer. After knowing the ingredients, you may step yourself back before even thinking of it.

The basic and the most common ingredient of veg puff is refined flour. In my previous articles as well. I have listed the effects of consuming it. To the extent people are concerned towards their health and the health of their children, they must be knowing how much refined flour is dangerous. It has no fiber, proteins or any other nutrients. Another most dangerous ingredient is Dalda.

Heard it right! Dalda is extremely harmful for health. Dalda ghee is made of hydrogenated vegetable oil. Doctors recommend to avoid every food which contains in it hydrogenated oil.

The veg puffs available in the market are prepared from dalda only. In order to make multiple layers in a puff, dalda ghee is used in really good quantity. Dalda is applied on the pastry sheets multiple times, then are repeatedly rolled and folded.

The veg puffs available in the market, does not guarantee good quality of its stuffing as well.

So, after knowing the preparation of veg puffs of the market, eat it at your own risk!

Is veg puff good for health?

Answer is a big NO! If veg puff is prepared using whole wheat and is baked instead of deep frying, then only it could be placed under the category of something healthy. One should completely avoid consumption of veg puff prepared using refined flour. Consumption of not only veg puff, but any food prepared using refined flour, should be discarded.

What is the alternative to veg puff patty ?

Alternative to veg puff patty is whole wheat version of it. Yes, veg puff patty can be prepared using whole wheat flour. But there is a difference between veg puff patty made from refined flour and whole wheat flour. Patty prepared using refined flour have multiple layers. However, this is not the case with the whole wheat flour. To be honest, whole wheat puff patty does not have multiple layers but is surely equally tastier and crispy golden brown. Being too good with the taste and crunchiness, whole wheat puff patty or atta veg puff patty is much better alternative.

Recipe of veg puff patty – whole wheat

INGREDIENTS

For pastry sheets
  • whole wheat flour- 1 cup
  • salt
  • baking soda
  • baking powder
  • Butter
For stuffing
  • Potatoes
  • salt
  • coriander powder
  • powder of cumin seeds
  • green chilly
  • Mustard oil/olive oil
Steps for puff pastry sheets

Step 1: In a bowl, take 1 cup whole wheat flour. Add salt, baking soda and baking powder to it. Sieve them twice.

Step 2: Using cold water, knead the dough and once kneaded, keep it aside to rest for 15-20 minutes.

Step 3: Till the time, dough is resting, in a bowl take ½ cup of butter at room temperature. Beat it for 5-7 minutes till frothy.

Step 4: After 20 minutes roll the dough into a thin sheet. And apply the butter over it evenly.

Step 5: Now, fold the sheet from two corners and again apply butter over it. Again fold the sheet into a small square.

Step 6: Take the folded sheet and cover it in air tight box or food wrap. Then, keep it in the refrigerator for at least 30 minutes.

Step 7: After 30 minutes, take the dough out of the refrigerator. Uncover it from the wrap. Now, start rolling it lightly. Do not roll the sheets with a lot of pressure. Roll it into a thick sheet.

Step 8: Apply butter over it, fold it from two sides. Again apply butter and fold it into a square. Keep it in the refrigerator again.

Step 9: You need to repeat this process thrice. In the whole recipe this process should be done thrice.

Steps for stuffing

Step 10: In a pan, take 1tbs mustard oil. Once it gets hot, add chopped potatoes to it.

Step 11: After potatoes are half done, add coriander powder and cumin seed powder to it. Add salt to taste. Mix them well.

Step 12: When Potatoes are cooked, mash them well and keep them aside.

Preparing veg puff patty

Step 13: After repeating the process or rolling and folding thrice. Take the dough and roll into thick sheets.

Step 14: Cut the sheet into squares.

Step 15: Place a small portion of the prepared stuff into one corner. Cover it with another side very lightly.

Step 16: Prepare all the patties using same procedure and technique.

Baking veg puff patties

Step 17: Keep the oven to pre-heat at toast mode for 15 minutes.

Step 18: Now, place the patties on a baking tray, covered with butter paper.

Step 19: Arrange patties on the tray and brush them with melted butter.

Step 20: Put the tray in oven, on bake mode, at 200 degree C. for 25-30 minutes.

Once they are baked, serve them with tea. Enjoy!

Some Dos and Don’ts’

  • Keeping the dough in refrigerator is a must. One cannot skip this step. Rolling-applying butter-folding and keeping in refrigerator is an essential step.
  • Water required to knead the dough should be cold.
  • Baking soda should be accurately same to the amount mentioned.
  • Pre heating is important.
  • Do not create pressure over the dough while rolling it. Roll it as lightly as possible.
  • Baking time may differ slightly depending on oven.
